Mutton Biryani - II

Ingredients:

Mutton: 1 kilo

4 onions (finely chopped)

5 tomatoes (chopped into small pieces)

Yogurt: one small cup

2 tea spoon red chili powder

2 teaspoon turmeric powder

Salt to taste

1 teaspoon black cumin

Hot spice powder: 1 teaspoon

Few pieces of cloves, cardamom, cinnamon sticks

Bay leaves, black cardamom (whole spices)

Ginger and garlic paste

Food colors (optional)

Rice: 4 cups

Oil: one cup

Directions:

Put oil into a saucepan, add chopped onions and fry them until they turn little golden brown. Add pieces of mutton and fry them for 4 to 5 minutes. Then add salt, chili powder, turmeric powder, whole spices, ginger and garlic paste, and the rest of all the spices. Add 3 cups of water; let it cook for half an hour. When the meat is almost tender add tomatoes and yoghurt to the mixture. Cook it for another 3 to 4 minutes. Take a separate saucepan and boil the rice to half cooked and drain (rice should not be very soft). Now using the same pan in which you had boiled the rice (must be empty) put one laver of the rice on the bottom of the pan. Then add the mixture of meat on top of the rice and again cover it with another layer of rice. Continue this process until the rice and the mixture are finished. Now add a little freshly chopped coriander and mint leaves, few drops of lemon juice, mixture of food color on top of the rice (for garnishing), cook over moderate heat for about 3 to 4 minutes until rice is completely cooked. Now Biryani is ready, serve it with vegetable salad and yoghurt.
