Guacamole

Serves 8

-         3 avocados, stoned, peeled

-         2 small tomatoes, skinned, seeded, diced

-         1 small onion, very finely chopped

-         2 fresh red chilies, chopped

-         2 tablespoons chopped coriander 2 tablespoons lemon juice

-         2 x 200 g/61/2 oz packets corn chips

 

Mash avocado flesh roughly with a fork. Combine avocados, tomatoes, onion, chilies, coriander and lemon juice. Serve with corn chips for dipping.
