Prawns with Creamy Pesto Dip

Serves 8

- 1 kg/2 lb. cooked medium prawns, shelled, deveined, tails left intact

- 2 carrots, cut into thick strips

- 220 g/7 oz snow peas (mange tout), blanched

- 1 red pepper, cut into thick strips

CREAMY PESTO DIP

- ½ cup/125ml/4 fl oz whole egg mayonnaise

Dip: Combine pesto and mayonnaise in a bowl. Transfer dip to a serving bowl. Place on a platter. Surround with prawns, carrots, snow pleas and red pepper.
