This recipe is from my friend Patricia, a fellow revert and great cook!
3 cups all-purpose flour 
2 cups sugar 
1 1/3 cups oil (I used vegetable oil, worked fine)
1 teaspoon baking soda 
1 ½ teaspoons vanilla extract ½ cup nuts (chopped toasted pecans works well) 
1 teaspoon ground cinnamon 
1 teaspoon salt
 18 ounce can crushed pineapple (don't drain) 
3 eggs
2 cups diced banana 
Preheat oven to 350 degrees. Mix all ingredients together and pour into a greased and floured bundt pan. Don't over mix the batter or the cake will be tough. Bake for 1 hour and 10 minutes, or until a tester comes out clean.
